I’ve been wanting to try and make a Pavlova for a really long time. The recipe I tried today I found on the Allerhande website and made me feel pretty confident. 😉

This website is always a good source to find easy recipes. I adjusted it slightly (meaning less sugar) and I added my own little touch (enter the lemon curd!).

What you need:

5 egg whites, 200 gr of sugar, 2 teaspoons of cornflour, 1 teaspoon of white wine vinegar, 250 ml of fresh cream, 16 gr of vanilla sugar, fruit of your choice, lemon curd (optional)

First separate the eggs and then beat the egg whites and sugar (add in three times) until all fluffy and shiny, add the cornflour and white wine vinegar and mix through.

Draw two circles on a sheet of baking paper and spoon the mixture on top.

Pre-heat your oven to 150 degrees, but immediately lower it to 120 when you put your wreath in.

Bake for an hour and a half. In between, open the door and let some of the air escape.

Let it cool down in a closed oven and then whisk the cream together with the vanilla sugar and some lemon curd and pipe on top. Cover with an abundance of fruit.

Because I am simply crazy about lemon curd, I also spoon it on top of my piece. 😉
