I’m such a big fan of strawberries, but then again, who isn’t. 😉

When they’re back in season, I often make these cute and delicious little tartelettes.

They are full of flavour and colour and are so easy (and fun!) to make with your kids!

 

 

Pre-heat the oven to 200 degrees.

To make the dough, you simply sift 275gr of plain flour. Make a whole and put one egg yolk in the middle. Add 120 grams of cold butter or margarine (cut into small cubes/I often use Solo Patisserie) and start kneading the dough. Use one or two tablespoons of ice-cold water to help you form a ball.

Wrap in some kling foil and let it rest in the fridge for an hour or so.

Roll out the dough and line little pie tins with some baking paper, put the dough in and pierce a few times using a fork.

Blind-bake for about 15 minutes.

Let them cool down and in the meantime whip up some fresh cream together with some icing sugar.

Time to start filling the tartelettes.

I often spoon some delicious lemon curd in… but I guess that doesn’t surprise you. 😉

Cut the strawberries any way you want and put them on top.
