Quite a lot of you asked me for the recipe of these easy-peasy summer fruit galettes I often bake, so here it is!

What do you need?

one roll of puff pastry dough, 200 gr of ricotta, one packet of vanilla sugar, two tablespoons of lemon curd, a small box of frozen berry mix (in other versions I also added some fresh strawberries or rhubarb), one egg and some extra sugar

What do you do?

Pre-heat the oven to 200 degrees. Stir the lemon curd through the ricotta cheese.

Roll out the dough, spread the cheese mixture on top, stay 4 cm away from the edges.

Put the berries or other fruit on top,  scatter the vanilla sugar over the fruit and fold the edges inside.

Brush the edges lightly with the beaten egg and sprinkle some sugar on the edges.

Bake for about 30 minutes.

Let it cool off and serve.

Delicious with some whipped cream or ice-cream. Or a coffee. Or a glass of champagne ;-).

If you want to vary, feel free to use any fruit you want (also delicious with nectarines…).
