This delicious cherry cake was so easy to make and tasted just wonderful. Perfect for these early spring days!

What do you need?

3 eggs, 250 gr of flour, two teaspoons of baking powder, 120 gr of soft butter (I used Solo margarine), 70 gr of sugar, 70 ml of milk, lemon zest, a pinch of salt and a bowl of cherries.

This cake is not very sweet, but that’s how we like it. Feel free to add more sugar.

What do you do?

Pre-heat the oven to 180 degrees.

Rinse the cherries and drain well. Mix the butter until creamy.

Beat the eggs together with the sugar and add to the butter together with the lemon zest, the milk and the salt.

Then stir in the flour and the baking powder together with half of the cherries.

Pour the mixture into a greased baking tin and put the other cherries on top.

Bake for about 45 minutes.



Coat the cherry cake with some icing sugar before serving.
