Gnocchi – met venkel, spinazie en boschampignons

Diegenen die mij op Instagram al een tijdje volgen, weten het, wij zijn hier thuis zot van gnocchi en eten het dan ook regelmatig. ;-) Dit receptje is wederom 'quick and easy', een echt toppertje dus! Wat heb je nodig (voor 5 personen): 2 bakjes gnocchi van 500gr. (ik vind die van De Cecco het lekkerst en die liggen hier gewoon bij de AH), olijfolie, twee venkelknollen, één bakje boschampignons, 300 gr spinazie, één pakje Solo Crèmefine, een groot stuk blauwe kaas, peper en zout....

Veggie lasagna met pompoen en belegen geitenkaas

Lasagna is altijd een goed idee... zeker wanneer die boordevol groenten zit zoals deze. Tijdens de week proberen we hier thuis te koken zonder vlees (jawel, wij zijn flexi) en in dat schema past dit receptje dan ook perfect. Ik vond vorig weekend toevallig een heerlijk receptje in de laatste Allerhande (te verkrijgen bij AH). Ik maakte mijn eigen versie en die werd super gesmaakt door zowel de echtgenote als de kinderen. One happy chef dus. ;-)...
