Let me share a quick and easy recipe for a truly delicious summer pie with you all.
Start by making the dough: you need 250 gr of wheat flour, 125 gr of soft butter, 75 gr of sugar, one egg and a pinch of salt. Knead until everything comes together and shape into a ball. Let it rest for one hour in the fridge wrapped in cling film.
Take it out and roll it flat using a rolling pin. Slightly grease a baking tin and gently ease the dough into it.
Cut the rhubarb into small pieces and spoon together with the blackberries (my son loves collecting these in our woodland garden), some almond flakes and a few tablespoons of jam sugar (not too much since you want to keep the ‘sour sensation’ of the rhubarb). Pour the mixture on top.
Place in a pre-heated oven (200 degrees) for about 40 minutes.
Let it cool off slightly before eating… if you can. 😉
