Lucky me. For my birthday last April,Β  I received a voucher from my two best friends and my wife for a day trip through the Flemish countryside driving a true classic: the Citroen DS. I have always loved this car and she - yes, it's a she - has featured on my Instagram account numerous times before....
My wife and I try to head to London at least once a year. Two weeks ago, we took our girls along again for a short weekend. They had visited London, before, so luckily we could skip all the touristy sights. They are both huge Harry Poter fans and were eager to see some of the movies' locations. We didn't want to spend an entire day outside London, so we decided not to go for the Warner Bros. studio tour just outside the city . We'll keep that for another time, cause it certainly looks great....
When the misses and I were young... hm, I mean, younger... we used to travel to the UK a lot, especially the South of England and the West Country, we even honeymooned in Cornwall. But somehow we lost sight of this beautiful country the last 15 years (busy travellling the world and so on... ;-)), except for our yearly trips to London, of course. Last year, we picked up on our tradition again and went on two trips, one to Rye and one to Canterbury. For this year's family trip, we decided to visit the lovely seaside town of Whitstable, which is only a 45 minute drive from Dover. We drove the car on the ferry at Calais and enjoyed a wonderful sunny crossing on board of one of the P&O ferries, called 'The Spirit of France'. An hour and a half later, we were already were admiring the famous White Cliffs of Dover. I completely forget how much fun it is to arrive in England by boat!...
Nothing better than avocado. I would eat it every day, if I could... For last night's dinner I whipped up some delicious avocado mayonaise to go along a nice piece of wild salmon and some oven baked sweet potato fries. Our kids absolutely love these fries, so we make them quite often. The mayonaise is so easy to make. Since I am testing the KitchenAid Classic Mini-Food processor for Solo Open Kitchen these days, I decided to use that....
Stew might sound like winter to you... but also in summer this dish is definitely a winner! For this recipe I used a of veggies from @boerentoer. They work with a chain of local ecolological farmers. You can order online every week and then the biological veggies are delivered to your house, super-easy! Check their website for more info! We also sometimes order bread (sooo good!), yoghurt and delicious cheese from them. All locally produced....
This super easy recipeΒ is based on aΒ Jamie Oliver recipe. The only thing different is that he used apricotsΒ where I used wild peaches, I added lemon curd (of course!! ;-)) and I only added the basil leaves afterwards instead of mixing them into the cheese mixture (but please feel free to do so!)....
