Last weekend, while browsing in the Delicious magazine, I came across this delicious (;-)) recipe for an easy lentil oven dish.

Sounded like a perfect idea for dinner that evening and it turned out to be so good!

Let me share it with all of you.

What you need (for a family of 5):

1 kg of potatoes, 60 gr of butter, a few table spoons of olive oil, 1 finely chopped onion, 2 cloves of crushed garlic, 5 cm of fresh cut ginger, 2 celery stalks finely chopped, 1 carrot in small cubes, 60 gr of curry paste, 800 gr of lentils rinsed and drained, 400 gr of passata, 160 ml of coconut milk, 150 gr frozen peas, some coriander

What you do:

Boil the potatoes with a little salt, Drain and mash with the butter, pepper and salt.

Meanwhile, in a frying pan, heat some olive oil and fry the onion, garlic, ginger, celery and carrots for about a good 10 minutes.

Add the curry paste (stir to release the aromas), the lentils, the passata and the coconut milk. Bring to a boil and then lower the heat. Let it simmer for about another 10 minutes.

Add the frozen peas and some chopped coriander.

Pre-heat the oven to 220 degrees. Pour the lentil mixture into a big oven dish and cover with the mashed potatoes. As an extra-touch I pressed some small cubes of old Dutch cheese into the mash.

Let it colour in the oven for about 20 minutes. Sprinkle with some coriander and serve.

 

 

You see, very easy, but so incredibly tasteful.
