Breakfast is my favourite meal of the day, well, actually any meal is my favourite meal… 😉 and in the weekend I try to make it extra-special.

Last weekend I baked this lovely easy-peasy bananabread with berries.

 

 

I grilled it slightly on the Sunday morning

 

 

and topped it with a creamy coconut yoghurt, fried banana and some fresh fruit.

Absolutely delicious! 😉

 

 

For the bananabread I just combined 3 ripe (mashed) bananas with 3 eggs, 100gr of self-raising flour, 60gr of oatmeal, a teaspoon of baking powder, some cinnamon and a handful of blueberries.

Bake for about 45 minutes  at 180 degrees.

I sprinkled it with some roasted almond flakes. Feel free to add some nuts, if you like that extra bit of crunchiness.
