Let me share a quick and easy recipe for a truly delicious summer pie with you all.

 

 

Start by making the dough: you need 250 gr of wheat flour, 125 gr of soft butter, 75 gr of sugar, one egg and a pinch of salt. Knead until everything comes together and shape into a ball.

Let it rest for one hour in the fridge wrapped in cling film.

Take it out and roll it flat using a rolling pin. Slightly grease a baking tin and gently ease the dough into it.

For the filling you need 300 gr of rhubarb, 125 gr of blackberries, some almond flakes  and a two tablespoons of jam sugar.

Cut the rhubarb into small pieces and spoon together with the blackberries (my son loves collecting these in our woodland garden), the almond flakes and the two tablespoons of jam sugar (not too much sugar since you want to keep the ‘sour sensation’ of the rhubarb).

Pour the mixture on top.

Place in a pre-heated oven (200 degrees) for about 40 minutes.

Let it cool off slightly before eating… if you can. 😉
